How to Make Banana Cake

With the holiday seasons approaching, it becomes important to maintain a well planned dinner with proper appetizers, main courses and cocktails and not to mention the much awaited and loved deserts. Everyday you need some good ideas for the menu otherwise, you would hear complaints that the dinner is monotonous. It is also increasing important that you make your kids enjoy dinner at home otherwise they would fill stomach with junk food, which you would not appreciate. So, it is not a bad idea to try out few good dishes at home and surprise everyone with your newly acquired culinary skills. If you want some ideas on making good cakes for the holiday season, then you can always try out the simpler ones first. The banana cake is easy to make and is nutritious and yummy at the same time.
Here is the list of ingredients you would need to make a delightful banana cake :

  • Three medium bananas (ripe ones are good).
  • Two cups of self-raising flour
  • One cup of soft butter
  • One cup of soft brown sugar
  • Two medium eggs
  • Two third table spoon of walnuts
  • One third table spoon of lemon juice
  • Two tablespoons of oil (olive or vegetable)
  • One cup of soft cheese
  • Half cup butter
  • One and half cup sugar
  • Half teaspoon of vanilla essence
Preparation and cooking
  • You also need to get a tin plate or loaf tin for setting the cake and a big bowl to make the dough. It always helps to leave the butter out for about two hours in room temperature or beat it finely before putting it in the dough.
  • Peel and mash the banana. Make sure there are no big lumps in it. That is why if you take ripe bananas it is better.
  • Finely chop the walnuts and keep aside. Avoid if anyone is allergic to nuts and instead use sultanas.
  • Mix the banana and walnuts properly.
  • Add an egg and half the flour.
  • Stir in the shape of eight with a fork.
  • Now once you see there are no big lumps, add the other egg and remaining flour and keep stirring. Remember you need to maintain the shape of eight for making the cake fluffy.
  • Add the vegetable oil and mix well.
  • Add the butter and brown sugar and stir well creating the shape eight.
  • Grease the tin properly.
  • Place the dough in the tin and put it in a preheated oven with 180°C / 350°F.
Icing
  • After you remove the cake pierce a knife and check if the cake is ready or not. If the cake is not baked properly, the knife would have dough sticking to it otherwise, it would come out clean.
  • Mix the icing sugar, butter, cheese and vanilla essence. Make sure there are no lumps in it.
  • Spread the icing on the cake and decorate it with cherries and dry fruits.
